Wanted to circle back and get everyone on the same page re late night family meal, after having some time to talk it through with Chef Matt et all.  Nothing too heavy here, it just seems a few things had naturally morphed over time.

-This is a family meal made to feed the staff that arrives to work around 3:00-4:00 pm, and essentially works non stop until 2:45-4:00 am.
-Family meal should not be put up in the window or have any food taken from it until 2:30 am.  Chef Matt has spoken to the overnight prep team, and they should be on the same page with holding the covered prepared food in the back until 2:30 am and then bringing it to the line.
-Holding the food back as we have always done will prevent earlier cut staff on both FOH and BOH from helping themselves to take-out food that is not designed for their shift.
-Family meal certainly does not have to re-invent any culinary wheel.  A simple salad and pasta (w/ some vegetarian on the side) always works, anything from late night that might be ‘leftover’, flatbreads not sent out to BEOs, etc.
-If there are any questions about roughly how many staff will be on the closing team at 2:30 am a quick convo with the FOH manager should add clarity; and of course, the amount of food should be enough for Avenihir, the closing Chef, and any other overnight kitchen crew.
